Ingredients

  • 6 Organic Eggs separated ( you will be whipping the egg whites separately )
  • ¾ Cup Organic Sugar
  • ¾ Cup Butter Substitute or Organic Butter softened
  • 1 tsp Vanilla
  • 1 ½ Cups Pecans chopped fine
  • 1 ½ Cups Semisweet Chocolate Chips melted and cooled slightly ( I use the Enjoy Life brand of chocolate chips )

Instructions

  • Preheat oven to 350˚
  • In a bowl whisk the Egg whites until they form a white foam then slowly add in ¼ cup of sugar. Continue whisking until stiff peaks form.
  • In a separate bowl combine the Egg yolks and ½ cup of sugar and mix until smooth.
  • Stir in the Butter substitute or Organic Butter until well incorporated.
  • Add in the Vanilla, chopped Pecans and Chocolate and stir to combine.
  • Spoon in 1/3 of the Egg whites at a time folding to incorporate between each addition.
  • Pour the batter into a sprayed spring form pan and smooth to the edges.
  • Bake at 350˚ until a tooth pick inserted in the center comes out clean, 40-50 minutes. Let cool to room temperature before serving.
  • It is yummy as is but adding a scoop of coconut ice cream ( any flavor you like ) just puts it over the top! Enjoy.

    1. Some nuts would be needed for the texture and flavor. You could use walnuts or even hazelnuts or just cut back on them.
