So did you know that Essential Oils are awesome for hair care?  I’m sharing a great recipe for Essential Oil Hair Spray below!

A dōTERRA user has this to say about hair products:

I’m not one to wear perfumes. I have been pleasantly surprised with how wonderful doTerra hair products smell. My favorite three recipes using doTERRA essential oils are Dry Shampoo, Beach Wave Salt Spray and Spray for Razer Rash.  Thankfully, these recipes are great smelling and take little time.  They work just as well as the store brands and smell a whole lot better! The Beach Wave Salt Spray give my hair more body and makes me feel like I just came from the beach.  I highly suggest you give these recipes a try if you haven’t already!

DIY Essential Oil Hairspray recipe:

Making your own hairspray is easy with essential oils and only takes a few simple ingredients.  I’m sure you already have these at home. The recipe can easily be customizable to your favorite essential oils and to your preferred hold.

Ingredients:

8-ounce glass fine mist spray bottle

1 cup water

4 teaspoons sugar

Tip: Use more or less sugar depending on how strong you want the hold to be.

Geranium essential oil, 2 drops

Lavender essential oil, 2 drops

Peppermint essential oil, 2 drops

Rosemary essential oil, 2 drops

Clary Sage essential oil, 2 drops

Note: Feel free to customize the essential oils to your preference. You can use one or all of the essential oils listed above. However, be careful using citrus oils as they can lighten your hair if exposed to UV light.

Directions:

  1. In saucepan, combine sugar and water. Bring heat to boil and stir until sugar dissolves. Remove from heat and cool.
  2. Pour essential oil into glass spray bottle and add cooled sugar water.
  3. Use as you would any other hairspray.

Ratatouille Recipe – Dairy & Gluten Free

This is the perfect time of the year to use up those lovely garden veggies and make this wonderful Ratatouille Recipe – Dairy & Gluten Free!  I love the combination of zucchini, squashes, eggplants, basil and tomatoes. My favorite squash is a crook-neck yellow squash, they are so tasty in this dish.  I may even add onions to this mixture next time!  Tell me how you like it and enjoy!

Zucchini is so yummy and can be used in so many different recipes.  Did you know Zucchini contains NO fat, and is high in water and fiber which is good for your gut!  It is high in vitamin B6, riboflavin, folate, C, K, and minerals, like potassium and manganese.

This Ratatouille recipe would be wonderful with the addition of a dairy free cheese!  I love the Violife & Daiya brands of dairy free cheese.  They have so many flavor options!!  It’s so much easier to even find dairy free feta!  Dairy Free cheese and sour cream make eating veggies so much more enjoyable.

I grow my own veggies in my greenhouse so I feel very happy knowing that no pesticides have been used on my vegetables.

Ratatouille Recipe - Dairy & Gluten Free

Great way to use your end of summer veggies!

Ingredients

  • 2 small Yellow/Summer Squash
  • 2 small Zucchini
  • 2 small Chinese or Japanese Eggplants
  • 3 to 4 firm Roma Tomatoes
  • 1 26 oz jar Tomato Sauce
  • 2 tsp Herb de Provence
  • 2 tbsp Olive Oil extra virgin
  • 2 cloves Garlic minced
  • 4 leaves Fresh Basil more for garnish
  • salt to taste
  • pepper to taste

Instructions

  • Preheat the oven at 350 F.
    Slice the zucchini, yellow squash, eggplant and the tomatoes into thin rounds.
    In the cast iron pan, add the tomato sauce, olive oil, herb de Provence, chopped basil, minced garlic and salt and pepper. Give everything a good mix.
    Arrange the sliced vegetables in alternating patterns, like we did eggplant, yellow squash, zucchini and tomato, on top of the sauce from the outer edge to the middle of 12" cast iron pan.
    Brush the exposed part of the vegetables with olive oil and sprinkle salt and pepper.
    Bake for 45 minutes to an hour or until the vegetables are soft and tender.
    Garnish with more fresh basil.
    Serve with a side of gluten free bread or over gluten-free pasta.
    Notes
    If the vegetables seems to burn or brown too much, cover the pan with foil.
    Instead of 12" cast iron pan, you can use a 12 inch round or oval casserole or a 9x11 baking dish.

Not sleeping well makes you tired! It also prevents you from performing your very best. You may feel groggy and maybe even a little disoriented throughout the day with lack of sleep.  That makes it difficult to accomplish even the smallest tasks.  

When you’re having trouble falling asleep or staying that way, essential oils may help. They have many therapeutic properties that can create a good environment for sleeping.  Using in a diffuser helps the air be cleaner for less allergens.

Some of the best doTERRA essential oils for better sleep include:

  • Sweet Marjoram – This oil has sedative properties that are calming and relaxing. It helps to soothe negative feelings, lower blood pressure and relieve tension.

When you don’t sleep well at night it causes all types of problems. In addition to feeling tired and grouchy, it can make you accident prone. People who are normally easy going can even become aggressive towards others or withdrawn and not want to socialize with family and friends.

Spinach Paratha Gluten & Dairy Free

Spinach Paratha Gluten & Dairy Free

Did you know that Spinach Paratha is also a fancy name for the most favorite type of unleavened Indian Bread?  Paratha, also known as Roti, is usually made from whole wheat flour but this recipe is made with Gluten Free flour!  You can also substitute besan or chickpea flour in making this recipe.

So what is the difference between Naan and Paratha? Yogurt is added to naan to give it more volume and thickness. Paratha, on the other hand, is soft and flaky.   The softness of Parantha depends on the Softness of the dough. Adding some salt to flour while kneading it will help while also adding a little water at a time.

Putting Paratha on a well heated tava or pan, will help it keep soft and flaky. Wikipedia says: that a tava, tawa, tapa or saj is a large flat, concave or convex disc-shaped frying pan made from metal.  This pan is usually sheet iron, cast iron, sheet steel or aluminium originating from the Indian subcontinent.  If you put parantha on cool tava or pan, waiting for the pan to heat up, it will turn hard.

We use spinach in the dough of this recipe for Spinach Paratha!  You could use onions or potatoes instead if you wanted.  I love the green color for serving with special meals or holidays like St. Patrick’s Day or Christmas! Plus this recipe is Gluten Free, Dairy Free and Vegan!

So you say, What do I do with Parathas?  Oh my!  I love them.  Anything you would use bread for you can use Paratha for! I like them especially with veggies in sauce, daal and curries.

The Spinach Parathas taste best when served hot. Store the leftovers in an airtight container. To reheat, place the spinach paratha in a plate. Cover with a damp paper towel and microwave for 15 to 20 seconds. Serve immediately.  This recipe makes 10 – 6 inch flatbreads.

Spinach Paratha

Delicious easy recipe for unleavened Indian Flat Bread. Gluten & Dairy Free, Vegan

Equipment

  • Fry Pan

Ingredients

  • 1 Cup Gluten Free Flour King Arthur Flour Measure for Measure GlutenFree Flour OR Bob Red Mill’s 1:1 GF Baking Flour + more for rolling out
  • 1/2 Cup Tapioca Starch
  • 1 5 onz Spinach Fresh Baby Spinach
  • 1 tsp Garam Masala
  • 1 tsp salt
  • 2 Tbsp Olive Oil and more for brushing on the parathas
  • 1/4 cup water and more as needed for kneading

Instructions

  • In a large sauté pan, combine ¼ cup of water and 5 oz. of baby spinach. Cook over medium heat until the spinach is wilted.
  • Dump the wilted spinach, along with the water it released into a mini food processor and blend it into smooth puree.
  • In a large bowl combine the gluten free all-purpose flour, tapioca starch, salt, garam masala and olive oil. Give it a good mix
  • Add the spinach puree and mix with a wooden spoon or a silicone spatula till the flour is well combined and there is no dry spot. Then using clean and well-floured hands, bring everything together into a smooth dough. You might need to add a tablespoon or two of water to bring everything together.
  • Cover and let the rough rest for 20 minutes.
  • Divide the dough into 10 equal parts and shape each part into a smooth round ball.
  • Place one ball in between two pieces of parchment and roll out into ¼ inch thick disk, which is roughly 6 inch in diameter. Repeat with the remaining balls. 
  • Keep the rolled disk stacked on top of another, separated with parchment paper and covered with a damp kitchen towel.
  • Heat an 8 inch skillet over medium high heat. Place the spinach paratha on a hot skillet
  • Once you see some bubbles on the paratha (in about 1 minute or so), flip it.
  • Brush a little oil on the now top side. Flip it again and brush the second side with some oil. Flip it again, so that both the sides are roasted. Place it a serving plate.
  • Repeat with the remaining rolled disks. Serve hot.

This is an Easy Pad Thai Recipe that is both vegan and gluten free!  I love the sauce so much that I often make a double portion.

In general, I love Thai food, and when we go out to a Thai Restaurant I always get Pad Thai.  It is my favorite because It is made with rice noodles or bean thread noodles!  Therefore, I never have to worry about what kind of noodles I’m eating since I am gluten free!  I really prefer bean threads, they seem to hold their firmness better and taste great.

Bean thread noodles are made from Mung Beans and are also called glass noodles or cellophane noodles.  I just call them bean threads because they are so much thinner than even angel hair wheat pasta!

Bean thread health benefits provide us with a good source of iron. One cup contains roughly 5 percent of your daily iron needs. According to Cleveland Clinic, beans and legumes are good plant sources of dietary iron. If you are at risk of iron deficiency or anemia, mung bean noodles may help you boost your dietary iron intake.

Pad Thai - Gluten-free, Dairy-free, Vegan

Ingredients

Ingredients

  • 8 oz. of dried Rice Noodle about ½ a packet
  • ½ cup of Red Onion thinly sliced
  • ½ cup Green Bell Pepper cut into strips
  • ½ cup Red Bell Pepper cut into strips
  • ½ cup Carrots cut into strips
  • 2 table spoon of Olive or Coconut Oil
  • ½ cup Bean Sprout
  • ¼ cup roasted peanuts lightly crushed + some more to garnish
  • A handful of torn Cilantro to garnish
  • Sauce
  • 2 tablespoon of Tamari or Coconut Aminos
  • Juice of one large Lime about 2½ tablespoon
  • 2 tablespoon Honey
  • ½ teaspoon of Chili Paste or Sriracha or Hot Sauce
  • ½ teaspoon of grated Ginger
  • ½ teaspoon of grated Garlic

Instructions

Instruction

  • Bring a pot of water to boil. Add the noodle and let it soak for 8 minutes. Drain and keep aside.
  • While the noodles are soaking, in a bowl, combine tamari, lime juice, honey, chili paste (if using), ginger and garlic. Whisk it well. Keep aside.
  • Heat a wok or a large pan over medium –high heat. Add the oil and let it shimmer.
  • Add the onions, bell peppers and the carrots. Sauté for 3 to 4 minutes till the veggies are slightly soft, but still crunchy.
  • Add the noodles and the prepared sauce and quickly stir fry for couple of minutes, till the veggies and the noodle are coated with the sauce.
  • Add the bean sprout and the peanuts and give one final stir.
  • Serve immediately, topped with extra crushed peanuts and some fresh cilantro and lime wedges.
  • Notes
  • You can add or subtract any vegetable. Bok choy, mushroom, snow peas, asparagus, green beans are all great choices.
  • The chili paste or hot sauce in the sauce is optional. Traditionally, the Pad Thai sauce should have Heat (chili paste/hot sauce), Salty (tamari), Sour (lime Juice) and Sweet (honey) flavors. But if you are intolerant to heat, just leave it out.

Rash! Are rashes a problem for you when you shave? This DIY Shaver Rash Spray Recipe is a healing spray using Helichrysum Essential Oil. As a result, it’s going to make you feel so good!

Can you believe that Helichrysum was used by the ancient Greeks?  How cool is that!  The Greeks called Helichrysum the Immortal Flower and doTERRA Essential Oils has it!

As a result, Helichrysum oil is good not only for a rash but also for hives and breakouts too. Other healing properties are, for instance:

-Possessing natural skin supportive properties that help reduce blemishes, scarring, and skin aging.

-It is a detoxifying agent, helping to strengthen liver function.  This affects everything from skin health to brain health.

– Helichrysum also enhances blood flow and is especially supportive of circulation.

Helichrysum Oil is known as one of the best essential oils for your skin. A HUGE benefit of Helichrysum oil is that it provides a natural way to improve your skin. Many commercial cleansers and moisturizers contain harmful toxins, whereas using a pure essential oil, like Helichrysum, allows you to keep your skin clean and protected.

In conclusion, A dōTERRA user shared  his experience with this DIY Shaver Rash Relief Spray. He wanted to test the claims of how well Helichrysum works.  He uses it after he shaves and is very pleasantly surprised with how it calms his skin from breakouts.  His current aftershave didn’t work as well!  His daughter also uses it on her legs after shaving and she said it made them “oh, so smooth.”

DIY Shaver Rash Relief Spray Recipe:

Ingredients:

1/2 cup Fractionated Coconut Oil

1/4 cup rosewater (can be purchased at health food stores)

Frankincense essential oil, 5 drops

Lavender essential oil, 5 drops

Melaleuca essential oil, 5 drops

Helichrysum essential oil, 5 drops

Myrrh essential oil, 5 drops

Directions:

  1. Place Fractionated Coconut Oil and rosewater in glass spray or pump bottle.
  2. Add essential oils and shake.
  3. To use, spray directly on skin or place 2-3 pumps in palms and rub on affected skin.

Thanks again goes out to Becky, my daughter in law!  She is a great cook and shares with me many of her recipes because she wants you all to enjoy them too.  This recipe for African Peanut Soup is Dairy & Gluten Free!

This soup is also called groundnut soup or maafe sauce d’arachide (French). Therefore,  It is a soup made from peanuts with various other ingredients.  However, It is a staple African STEW as opposed to soup. It is also eaten in East Asia, Taiwan, the United States and other areas around the world.

In Ghana, African Peanut Soup is often eaten with fufu, aka flatbread.  In addition, It is made with equal portions of cassava and green plantain flour mixed thoroughly with water.

Here are the health benefits of ground nut oil which I call peanut butter!

-Vitamin E: 45% of daily requirement

-B3: 67% of daily requirement

– Daily requirement of B6: 27%

-Magnesium: 39% of daily requirement

-Copper: 24% of daily requirement

-Manganese: 73% of daily requirement

And a small amount of B5 vitamin, iron, potassium, zinc, and selenium.

We also use Fresh Ginger in this soup . Ginger is a flowering plant whose rhizome is widely used as a folk medicine. It is a herbaceous perennial which grows annual pseudo-stems.  Therefore, these pseudo-stems are about 39 1/2 inches tall bearing narrow leaf blades. WebMD says:  ginger is used for treatment of upset stomach and nausea. There’s evidence that it helps. Ginger seems to aid digestion and saliva flow. Studies found that taking ginger could reduce nausea and vomiting in some pregnant women.  In addition, Ginger seems to help with nausea caused by vertigo as well.

African Peanut Soup - Dairy & Gluten Free

Delicious Lunch or light Dinner

Ingredients

  • 2 tsp peanut oil
  • 2 cloves garlic crushed
  • 1 cup onions chopped
  • 1/2 cup mushrooms chopped
  • 1/4 tsp red pepper flakes
  • 1/2 tsp paprika
  • 1/4 tsp ginger or 1/2 tsp FRESH grated ginger
  • 2 cups broth vegetable
  • 14 ounces tomatoes crushed
  • 1/2 cup pumpkin cooked or mashed
  • 1/4 cup peanut butter
  • 1 med scallion sliced

Instructions

  • In a medium sauce pan, heat the peanut oil over medium-low heat. Add onion, garlic, and mushrooms and sauté slowly until vegetables are soft and golden colored. Add red pepper flakes, paprika and ginger and sauté for another minute. Add broth and tomatoes. Simmer for 15 minutes. Remove from heat and allow to cool.
  • Puree vegetables and broth in a blender. Add pumpkin and peanut butter and blend until the consistency is to your liking. Reheat carefully over low heat, adding more broth or water as needed. Garnish each serving with sliced scallions.

For you Pescetarians out there!  Wikipedia says: Pescetarianism or pescatarianism, also known as ghotitarianism, is the practice of adhering to a diet that incorporates seafood (fish) as the only source of meat in an otherwise vegetarian diet.  I am leaning towards this diet using only fish as my protein.

This recipe is dairy and gluten free even if it is using salmon as the protein.  Using the salmon we catch in Alaska makes this dish pretty darn healthy.  Plus its a complete meal with spinach and arugula mixed into the potatoes!

Did you know that arugula is a Superfood?  Yup it is Nutrient-rich and low in calories – just 20 calories in about three cups –arugula provides an excellent source of folate, vitamins A and C, and over 100% of your daily vitamin K needs. And it supplies a good source of calcium, magnesium and manganese.

Just remember for those of you who cook with an IP – you have to allow time for the machine to come up to pressure.  Cooking time is only 3 minutes but the time it takes to come up to pressure takes a while.   Using this pressure cooker is so easy it chimes when it’s locked right.  There is no need to worry about it blowing up.

Instant Pot Salmon with Garlic Mashed Potatoes

Equipment

  • Instant Pot Pressure Cooker

Ingredients

  • 1.5 pounds red potatoes small, cut in wedges
  • 4 Tbsp Margarine or Coconut Oil Dairy Free
  • 4 6 onz Salmon filets 3/4 to 1 inch thick
  • 1/4 tsp paprika
  • 1/2 tsp lemon zest Plus 4 Lemon wedges for serving
  • 4 cloves garlic
  • 2 cups spinach fresh
  • 2 cups arugula fresh
  • salt & pepper to taste

Instructions

  • Put the potatoes in the bottom of the Instant Pot. Add 1 cup water, 2 Tbsp margarine, ½ tsp salt and a few grinds of pepper. Place the pot’s steam rack over the potatoes. 
    Rub the top and sides of the salmon with the paprika and lemon zest and season generously with salt and pepper. Place skin side down on the rack. Put on the lid, making sure the steam valve is in the sealing position, and set the cooker to high pressure for three minutes. When finished, carefully turn the steam valve to the venting position tor release the pressure. 
    Remove the salmon and rack and set the cooker to sauté at normal heat. When the potatoes start sizzling, add the garlic and cook, stirring, until softened, 1-2 minutes. Stir in the remaining margarine and season generously with salt and pepper. Smash the potatoes with a fork or wooden spoon until chunky. 
    Turn off the cooker. Add the mixed greens to the potatoes and stir until wilted, 1-2 minutes. Divide the potato mixture and salmon among plates. Serve with lemon wedges.
