Coconut Cream Mango NICE Cream – Vegan and Gluten Free

Want a nice dairy free ice cream that you can easily make at home?   This recipe is for mango but I am sure any fruit would be just as tasty in this recipe for coconut cream mango NICE cream!  The amount chosen is up to you and how much mango vs coconut flavor you would like the NICE cream to have. But the recipe we used is below.

Coconut Cream Mango NICE Cream

I prefer the thicker coconut cream although it is a little harder to find.  But it’s worth it for the extra creaminess of it and the added fat for little ones.  So far my favorite brand for this frozen NICE dairy free ice cream has been Thai Kitchen. It may be less at your local grocers.

Be sure to read the directions in the recipe so you don’t add the watery coconut cream.  You have to refrigerate the canned coconut milk and when it’s cold, take only this thick cream on the top. Save the coconut water that seems almost syrupy for smoothies, adding to pancakes, or waffles… we use it many different ways.

Coconut Cream Mango NICE Cream - Vegan and Gluten Free

Ingredients

  • 2-3 cups of frozen mango cubes OR ANY other frozen fruit
  • 1 can of quality coconut milk or coconut cream.

Instructions

  • Putting it all together:
  • Plan to chill the coconut cream in the refrigerator for at least 4 to 6 hours. I tend to leave a can or two in the fridge in the warmer months so we’re ready to make it whenever we like vs having to wait for the next day.
  • As the coconut milk or cream chills it will start to separate so that the water is on the bottom and the cream is on the top. Open the can at the top per usual and simply scoop out the thick creamy coconut fat, it almost has the consistency of a really cold cream cheese or soft serve ice cream.
  • Put this in the bottom of your blender. *(Save the coconut water that is thick and seems almost syrupy for smoothies, adding to pancakes, waffles..)
  • Add the frozen mango on top and blend on medium high until you have a thick but smooth nice cream. It should be perfectly soft and scoop-able.
  • This is fantastic right away or placed into silicone molds and saved for later frozen treats. It will melt rather quickly so you’ll want to be ready to transfer it or eat it as soon as it comes together.

  2. This looks so yummy. I cannot have milk so ice cream has been out of my diet for a long time. This looks so much better than real ice cream. I love that you give a tip on how to use the coconut water separated portion. I hate to just throw it away.

  3. This is so simple! I love it. I use the taste of thai canned coconut milk, but for some reason its no longer thick. The last few cans I got were very runny. I’ll look for Thai kitchen brand instead. thank you for this.
