Vibrantly Vegan Pumpkin Pie Recipe
A delicious vegan version of a family favorite
Servings: 8 servings
- 29 oz can Libby's Pumpkin
- 2 cans Coconut Milk
- 1 cup pitted dates
- 1/2 cup honey or agave or maple syrup.
- 1/2 cup cornstarch
- 1 tsp vanilla
- 1/8 tsp maple flavoring
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp salt
- Blend until smooth in blender, pour into 2-pie shells. Bake 350 for 1-hour
