Chocolate Pie and Pudding have been my favorite dessert, especially when my mother would make it.   She always made a graham cracker crust with the pie.   But I loved the pudding just as much as a pie.   Since going Dairy Free it took awhile to find a good Dairy Free Chocolate Pie and pudding recipe that tasted the closest to normal dairy chocolate pudding that my mom would make.

Dairy Free Chocolate Pie

I use my Blendtec Blender to make this yummy pie pudding!  It’s dairy-free and gluten-free, so rich and chocolatey!

The recipe for this fabulously easy and yummy Chocolate Pie Filling follows the photos.

Put all the dry ingredients into the Blendtec Blender

Add the vanilla and the water. Put the lid on the Blendtec Blender and blend for 20 seconds. Then hit the whole foods icon and let it run for that cycle and it will stop when finished.

This what it will look like after you have blended all the ingredients except the non dairy milk. Add that now.

Blend on lowest speed just until milk is thoroughly blended a couple seconds.

Pour the mixture from the Blendtec Blender into a 4-quart Sauce Pan and stir until thickened, about 5 minutes on med heat.

When mixture is thick remove from heat and pour into prepared pie crust. Refrigerate until thick enough to cut. Usually overnight.

Ingredients

  • 1/3 cup cashews I used salted and didn't rinse
  • 1/3 cup almonds
  • 2/3 cup organic natural sugar
  • 1/2 cup scant cornstarch
  • 2 cups water
  • 1/2 cup powdered cocoa
  • 1/8 cup coconut flakes
  • 2 tsp vanilla
  • 3 cups non dairy milk I used organic soy milk vanilla flavored

Instructions

  • Place ALL the ingredients EXCEPT for the soy milk, in a heavy duty blender. I use a Blendtec Blender.
  • Blend on whole foods pre-programmed cycle until very smooth
  • Then add soy milk and blend on lowest speed briefly until blended.
  • Pour the mixture into a large 4 qt saucepan and bring to a boil or until mixture thickens which takes about 5 - 8 minutes. This mixture thickens very quickly so stir often to prevent burning or scorching.
  • Pour cooked mixture into either a pre baked pie crust or into pudding bowls and chill a few hours or overnight for the pie. Top the pie with shaved chocolate curls for garnish.

Notes

This makes a delicious vanilla cream base for banana cream pie if you leave the chocolate out.

Did you know Enjoy Life has new Crunchy Vanilla Honey Graham Cookies (Gluten-Free and Dairy-Free)? The whole family ate them and thought they had such a nice light graham flavor.  So I experimented with the leftover cookies and made this yummy Graham Crust that you can use for any pie filling ! I am in Love! I used the Chocolate Pie Recipe above for the filling.

Graham Crust Recipe (Dairy-Free and Gluten-Free):

Blend the following in a Food Processor:

  • 1 box of  Enjoy Life Vanilla Honey Graham Cookies
  • 1/4 cup sorghum flour
  • 1/3 cup dairy free butter ( or real butter if you use dairy )
  • Blend until Crumbly then remove from food processor and
  • Pat the filling into a pie pan
  • Bake at 350 degrees for 8 minutes.    Cool
  • Fill Graham Crust with Pie Filling of choice!

    1. Well you can try it with other high powered blenders. You may just need to blend it alittle longer. It is soo soo yummy!

  13. I was looking for a gluten-free brand of graham crackers for a recipe yesterday, so will have to check out the Enjoy Life brand. I’ve heard of their products and should be easy to find. This would be a safe dessert for those that seem to be allergic to everything! It looks pretty too.

  16. Is the coconut necessary? I’m not sure if it’s added for flavor, or thickening. I ask because I can’t eat it.

    1. lisa, yes the coconut is added for flavor and also for thickening with it’s fiber. If you can’t eat coconut I’d just add 1/8 cup additional corn starch. You may have to play around with the thickness.

  18. This sounds really yummy. I am usually worried to make this kind of recipe where the “cream” mixture is supposed to thicken. Because I won’t use dairy I am never sure if it will set properly. I love that this is already made with ingredients I will use, and I can see that it does set. Thank you.

    1. Kelly I have never had it not set! I make many recipes vegan/dairy free using nuts as the base for sauces. They thicken so nicely. This chocolate pie filling is so yummy.

  25. I wouldn’t have thought to add nuts. I’ll bet that makes it taste even better. I don’t like graham crackers. I’d probably use Nilla wafers for the crust.
