Thai Green Curry Alaska Salmon
Living in Alaska, I have mentioned we fish for our own salmon and halibut so our fish is wild and fresh! Â You can use any stir fry veggies you like with this recipe. Â We used some tomatoes, green beans, carrots and chard. Â Enjoy!
Recipe for Thai Green Curry Alaska Salmon
Thai Green Curry Alaska Salmon
Ingredients
- 1 Tbsp canola oil
- 2 tsp green curry paste
- 13.5 oz coconut milk 1 can
- 2 Tbsp oyster sauce
- 1 Tbsp light brown sugar
- 4 salmon fillets 6-8 oz each
- your choice of fresh veggies to stir fry
Instructions
- In a large nonstick pan or stockpot, cook the curry paste in oil until fragrant, about 1 minute.
- Stir in coconut milk, oyster sauce, and sugar. Bring to a boil.
- Turn off heat and gently add salmon to sauce, skin side down.
- Place thinly sliced veggies of your choice on the fish.
- Return heat to simmer. Once simmering, cover pan and cook 5 minutes.
- Turn off heat and let salmon rest 5 minutes or until is it opaque throughout.
- Serve over cooked rice.

It would be lovely with any white fish. As matter of fact, it would be good with Chicken 🙂
