Dairy Free Chocolate Fudge

Dairy Free Fudge sounds like the Chupacabra of desserts. Something mystical, that cannot really exist outside the imagination.

Not true! It is possible — and even easy! – to create a delectable, decadent, chocolatey, gooey, dairy free fudge at home. Plus, there are only THREE ingredients! I know, I know — it sounds impossible. But I guarantee once you try this recipe there will be no longing for dairy fudge again!

Now, if you want to go a little lower on the sugar, you could use dark chocolate. It’s really up to your personal taste. Many people are used to the sticky-sweet traditional fudge, and you might be too, so in that case use the “milk” chocolate baking chocolate. If you’re trying to lighten up on the sugar, however, you can try to find unsweetened dairy-free baking chocolate.  The Detoxinista has the simplest, best recipe for sweetened condensed coconut milk in my opinion — it makes possible SO many recipes that I never thought could be dairy free!  I think the best gluten, dairy, soy and nut free chocolate chips are made by Enjoy Life.   Sarah, who is sharing this recipe, says she likes Enjoy Life’s Rice Milk Chocolate.  So you can use whichever chocolate you are a fan of, I’m a semi-sweet fan.

 

Dairy Free Fudge

Ingredients for Fudge:

Putting it all together:

1. In a medium saucepan, warm the sweetened condensed coconut milk. Don’t go crazy and boil it, just warm it on low-medium.

2. Break the baking chocolate into 1″ pieces and add it to the pan, mixing slowly until it is melted.

3. Add the coconut oil. Continue to stir until everything is melted and combined. Your house should smell pretty good by now.

4. Line an 8″x8″ baking pan with parchment paper, and pour the mixture in. Freeze for at least 4 hours.

5. When frozen, cut the fudge into 1″ squares. Store in the refrigerator.
