Peanut Butter Dream Bars, Dairy & Gluten Free

I have always wanted to come up with a recipe that used sweetened condensed milk but dairy free, something like those 7 layer bars.  Well while I was browsing some recipes I came across one I thought I could make dairy and gluten free!  So I am sharing this recipe for delicious Peanut Butter Dream Bars I named and created.  They are indeed dairy and gluten free but you’d never know it!

Bob’s Red Mill is coming out with some new Oat Products and I was lucky enough to get to try Bob’s Red Mill Gluten Free Organic Quick Cooking Rolled Oats in this recipe!   I also used Bob’s Red Mill’s Whole Grain Oat Flour.

This recipe turned out so yummy that my son and DIL and husband, who have no food allergies, ate almost 1/2 of the 9 x 13 pan in one sitting!  The rest was gone the next day!   My husband loves caramel and he said the peanut butter – sweetened condensed coconut milk mixture tasted just like caramel to him.   I could taste the peanut butter.  You can easily make this for potlucks and other large gatherings for those with food allergies as well as those without.  Everyone will LOVE them.  They are very very rich tasting!

Look around for this canned sweetened condensed coconut milk!  It makes baking so much easier!   If you can’t find it, I get mine HERE.

Peanut Butter Dream Bars, Dairy & Gluten Free

A recipe for delicious Peanut Butter Dream Bars. They are indeed dairy and gluten free but you'd never know it!

Ingredients

  • 2 cups quick cooking organic oats
  • 1 cup all-purpose flour I used Oat Flour
  • 1 cup brown sugar
  • 1/2 teaspoon salt
  • 3/4 cup butter substitute softened ( I used Earth Balance )
  • 14 oz can sweetened condensed coconut milk
  • 3/4 cup smooth peanut butter
  • 1 cup semisweet chocolate chips I used Enjoy Life

Instructions

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease a 9x13 inch baking pan.
  • In a large bowl, stir together the oats, flour, brown sugar and salt.
  • Cut in the butter substitute to form a crumbly mixture.
  • Reserve 1 1/2 cups of the crumbs, and pat the rest evenly into the bottom of the prepared pan.
  • In a medium bowl, stir together the sweetened condensed coconut milk and peanut butter. Spread evenly over the oatmeal layer.
  • Sprinkle the chocolate chips over the peanut butter layer, then crumble the reserved crust over the top.
  • Bake for 30 to 35 minutes in the preheated oven, until golden brown. Cool completely before cutting into bars.
  • Stores well in the refrigerator, but we always warm them up in a microwave to make the flavor go from fantastic to divine!
  • Serve alone or with a scoop of your favorite non dairy or dairy ice cream.

  5. I make something similar with honey instead of coconut so I think I’ll give this a try since I’m bound to love this flavor combination too.
