I am sharing with you my favorite stuffed peppers recipe! Stuffed peppers are loved almost as much as stuffed cabbage rolls, probably because I love the filling that I use for them.
However I do add something special for stuffed cabbage so that will be another recipe for another post in the future. But for today, if you love peppers, you will love this recipe!
When I ate dairy, I would top these before baking with shredded cheddar cheese and then cover and bake. So if you do not have a dairy issue that is the absolute best way to make these. For me being dairy-free now, I sprinkle the top with nutritional yeast or vegan cheese and then bake them.
Going without dairy for so long now, I feel like I don’t even miss it. However if you are Vegan you could top these with Violife or Daiya cheese before baking. The sauce for the peppers uses Campbell’s tomato soup IF you are not gluten free. For those who are gluten free I have a sauce recipe below that is wonderful. So without further chatter from me, here is:
1 package ground beef OR Gardein Ground Be’f to make it Vegan
1 package of dry Lipton Onion Soup Mix OR Just Like Lipton’s Onion Soup Mix
cooked rice 1 1/2 cups
15 onz tomato sauce, 4 onz tomato paste, 1/2 cup water or V8 juice for those who are Gluten Free. ( If you are not Gluten Free then you can use 26 oz can of Campbell’s Tomato Soup )
1/4 cup – 1/3 cup sucanat or brown sugar
nutritional yeast flakes
Sea Salt & Pepper to taste
1. In a large fry pan on the stove top, fry your hamburger and as you are frying add the Lipton’s onion soup mix OR Just like Lipton’s Onion soup mix
2. Prepare your tomato sauce, tomato paste, water and/or V8 juice OR have your Campbell’s Tomato soup ready if you can use that.
3. Prepare your peppers while your hamburger is cooking. I use yellow peppers because they are sweeter and seem to cook better. Occasionally when I use green peppers, the pepper is still crunchy after baking but the yellow peppers never are. So you wash the outside of the peppers, cut the top off, scoop out any seeds and skin, rinse the center of the pepper out and place in baking dish. You can eat the tops that you cut off or cut them up fine and add them to the hamburger that is cooking.
4. Add 1 1/2 cups cooked rice to the fry pan with cooking hamburger & spices. Mix the hamburger and rice and seasonings.
5. Then add 1 1/2 cup of your tomato sauce mixture OR tomato soup to the hamburger, rice, seasonings and mix together in the fry pan. * You will have some tomato sauce or soup left over, add 1/4 of 1/3 cup brown sugar to the remaining tomato sauce or soup and mix and set aside.*
6. Fill each pepper with hamburger, rice, tomato mixture from your frying pan.
7. When each pepper is filled, pour remaining tomato sauce OR soup with brown sugar mixed in over the top of the peppers.
