Heavenly Lentil Soup Recipe

I’m sharing a family favorite, Heavenly Lentil Soup Recipe for a hearty fall favorite soup.  My sister named it – not sure why she chose that name.   But it is true we feel so good when we eat it!   Mmmmmm   Since it is a one pot dinner – it is easy to make and clean up.   And leftovers freeze very well.  Just add some homemade bread and you have a filling meal that I consider comfort food. This recipe is Gluten Free, Dairy Free and Vegan.  Enjoy.

Heavenly Lentil Soup Recipe

Ingredients

  • 3 Tbsp of olive oil.
  • 6 garlic cloves minced
  • 1 red onion OR sweet walla walla onion minced I prefer sweet onions
  • 1 quart box of mushroom broth OR vegetable broth organic
  • Two 15 onz cans of tomato sauce organic
  • 2 cups dry lentils brown
  • 4 Tbsp brown sugar
  • 3 bay leaves
  • 2 tsp salt or to taste
  • 1 Tbsp Chicken like seasoning I use Bill's Best Chik-nish
  • 1 tsp basil
  • 1/2 tsp celery salt
  • 1/2 tsp cumin
  • 1/4 cup lemon juice fresh or the frozen fresh jc
  • 2 large potatoes-shredded
  • 3-4 carrots-shredded
  • 3-4 stalks celery-chopped
  • 3 large handfuls of fresh or frozen chopped spinach or chard about 2/3 cup fresh

Instructions

  • In a large stock pot put olive oil, garlic cloves and minced onion. Saute until the onion is transluscent.
  • Then add broth and every thing else except the spinach.
  • Simmer for a couple hours or until the lentils are done and vegetables are tender.
  • Minutes prior to serving add 3 handfuls of spinach OR red chard, chopped and continue to simmer until the greens are cooked.
  • Server with your favorite hot gluten free bread.

    I feel so much better being vegan and gluten free to I’m always looking for new recipes This one sounds great as I love lentils I like that somebody actually made it and not just from a cookbook, that way you know it will be good

      Alison, I don’t see why it wouldn’t…but I have never cooked lentils in a crock so I can’t say for sure. But lentils cook fast…so I’d give it a try.

    I love lentil soup, I haven’t tried making it without a ham bone. I don’t eat ham or hardly any meat, so I would like to try this recipe, it sounds like a very good one.

      Rosie..I never ate pork or ham…and know for so many soups they use beef stock or bones. This is a really flavorful soup vegan and gluten free. Let me know how you like it. It is my favorite soup. I’m working on more soup recipes

    This looks really tasty. I bought lentils for the first time to use it a vegetarian pot pie recipe and have a lot leftover so will definitely be making this soup, especially since I have all the ingredients on hand already!

    this is one of the few things that i like abt winter, making soups, i love making soup w/ different types of beans…..i can eat it all of the time…i make a big pot and freeze it….so i can have it thru out the week….it is one of the few things that i do cook

    This sounds lovely! I love cooking with legumes, but lentils are my favorite because they cook more quickly and don’t need pre-soaking.

    This sounds delicious! I can’t wait to try it!!! Lately I have been serving a soup, salad and fruit at every dinner! It takes a little more time to do, but my family is overweight and I feel if we all fill up on soup (liquid), salad greens and fruit, we will eat less of my fatty southern cooking! It seems to be helping A LOT!!!

    I am trying to become more concious of what I am eating and the ingredients in the foods I buy, but have trouble making yummy things or having ideas for dinner that will be healthy and still appetizing. I look forward to trying out some of these vegan recipes. The Spinach Mozzarella croissants look amazing. Just might be my first recipe.
