Blueberry Muffins with Nancy’s Cultured Soy Yogurt

I'd love it if you'd share this post:

I have been craving some healthy baked goods!  I think winter makes me crave carbs more.   Since I am trying to stay dairy-free, I am so glad I discovered that yogurt helps make baked gluten-free products less crumbly.  It reminds me of what buttermilk does to baked goods…making them so good.  So I whipped up these yummy Blueberry Muffins. YUM.

Blueberry Muffins with Nancy’s Cultured Soy Yogurt

I  found that Nancy’s Yogurt carries Organic Cultured Soy Yogurt as well as dairy yogurt products!  And the soy yogurt works very well to help bind and give the gluten-free blueberry muffins wonderful moistness and less of a tendency to fall apart!   Nancy’s Yogurt is the first U.S. yogurt company to add probiotics to its product since 1970! Having active live non- dairy cultures of probiotics tends to make their soy yogurt version a bit tart and tangy. The yogurt is a bit too tart for my taste to eat as is, but for baking it’s a killer!    I used Nancy’s Vanilla Flavored Non-Dairy Yogurt in Bob’s Red Mill’s Gluten Free Muffin Mix and added blueberries to have something yummy for a fast healthy breakfast. I modified the recipe on Bob’s Red Mill Muffin Mix so check out the recipe below. These muffins are gluten-free and dairy-free! And bursting with blueberry goodness.

Nancy’s Organic Cultured Soy is giving away a very fun gift pack!  Check out the giveaway here, it ends 1/31/2016.

“Tart and tangy -what real yogurt should taste like” Say’s Nancy’s:

“What are the benefits of a fully-cultured, tangy dairy product? Plain yogurt is generally an acquired taste that has many more health benefits than its over-sweetened milder cousins.

  • The longer the cultures are allowed to grow, the greater the number of beneficial microorganisms per gram. There is strength in numbers; therefore enjoy the tang!
  • Longer culturing converts the milk sugars (lactose) to lactic acid. Lactic acid lowers the pH of the digestive tract so that alkaline-loving, putrefactive organisms can’t thrive.
  • Fully grown cultures stimulate and strengthen the immune system.
  • The cultures lower the lactose and shorten the protein chains in Nancy’s dairy products, making Nancy’s Yogurt easier to digest and providing the necessary lactase enzyme for other dairy digestion.
  • The tangy, tart flavor of Nancy’s dairy products results in a yogurt with greater acidity, which assists calcium absorption and utilization, strengthening bones and teeth in the process.
  • Beneficial L. acidophilus, B. bifidum, L. casei, and L. rhamnosus organisms actually take up residence in the intestine, becoming part of the cell wall, thus not allowing bad organisms a location site there.
  • E.coli can’t feed on the lactose nutrient if these probiotic cultures have already utilized it. Acidophilus is the nemesis of E.coli, through antibiotic-like activity.

Nancy’s Yogurt and Dairy Products give you the very best yogurt, multitudes of health benefits, and a delightful tart and tangy flavor!”

  6. It sounds good but does it cost more to buy these products? I know that something in my diet is causing me problems but I’m not sure what it is.

    1. Hi Lisa, The products can be bought at a normal grocery store. I’m not sure what you mean by “cost more”? If you normally by mixes, yogurt or fresh blueberries then it should be in your range. I live in Alaska and everything costs more here than in the lower 48. You’ll have to compare prices.

  7. I don’t remember ever trying a soy yogurt, but would love to. The recipe seems easy enough and always a fan of blueberries.
