Gluten Free Carrot Cake Recipe

Carrot Cake in my house is an all time favorite.  However, finding a good Gluten-Free Carrot Cake recipe has been hard. The recipe below took some time. I had to tweak it many times to get a moist and yummy dairy-free and gluten-free carrot cake that everyone loved. Even my husband and son gave this Gluten-Free Carrot Cake Recipe a double thumbs up.

Gluten-Free Carrot Cake Recipe

Ingredients

  • 1/2 cup raisins
  • 1 cup bottled or filtered water
  • 2 tbsp flax meal mixed with 6 Tbsp bottled or filtered water
  • 1 cup scant Organic Pure Cane Sugar
  • 4 large organic eggs or egg substitute for liquid of 4 large eggs
  • 1 1/4 cup coconut oil melted
  • 1/4 cup honey or agave or maple syrup
  • 1 tsp vanilla
  • 1 tsp apple cider vinegar
  • 2 cups organic coconut flour (Let's Do Organic brand)
  • 1 tsp cinnamon
  • 1 tsp sea salt
  • 2 tsp baking soda
  • 2 cups grated carrots
  • 1 cup shredded organic coconut (Let's Do Organic brand)
  • 1 cup finely ground walnuts

Instructions

  • Put raisins and water into a small pot and bring to boil, then reduce the heat to simmer and cover, simmering until raisins are plump. Leave raisins in the water solution.
  • Mix flax meal and water and allow to stand about 10 minutes to thicken before mixing into batter.
  • Grease and flour a 9x13 baking pan.
  • Blending the liquids
  • Beat sugar and egg or egg substitute until smooth. Add flax meal and water mixture and beat well Add organic coconut oil, honey or agave or maple syrup and vanilla and beat well. Add raisins and the water it was simmering in and apple cider vinegar and mix well.
  • Adding dry ingredients
  • Add the organice coconut flour, cinnamon, salt and baking soda and blend well. Add grated carrots and blend, add shredded coconut and blend then add ground nuts and blend well.
  • BAKE
  • Preheat oven to 350 degrees. Pour thick batter into the prepared cake pan and spead evenly. Bake 45 minutes and check.. Cake is done when an inserted toothpick comes out clean and cake is firm. The cake will not be smooth on top...it looks rough and grainy.
  • When cake is cool...spread with icing of choice.
  • Frosting:
  • I used 4 cups powdered sugar, 1/4 cup soy milk, 1 tsp vanilla and 1/4 cup earth balance butter spread.
  • Another choice is 2 cups softened better than cream cheese, 1/4 cup earth balance butter spread, 1 Tbsp vanilla and 1/2 cup maple syrup or agave blended.
  • Enjoy this great Carrot Cake!

  6. Just wanted to followup my previous comment about altering this to make it vegan…. This recipe is labeled as vegan but calls for eggs, or egg substitute. Even egg substitutes are made from egg or animal products. The recipe could not be vegan if it contains any animal ingredients. It may have just been an oversight, or the sometimes confusion between vegetarian and vegan, where some vegetarians do eat eggs. Vegans do not consume/use any animal products.

    1. Kathe, this is a Vegan Recipe if you use egg substitute. There are tons of egg substitutes that are vegan. The Vegg, Bob’s Red Mill egg replacer, Energy egg replacer and of course you can always use applesauce or chia seeds or flax seed with water…so many to choose from.
      I do eat vegan but use eggs when I bake goods…so if you use eggs in this recipe of course it would not be vegan. You also would not want to use honey if you want it vegan. That is why I chose a substitute of agave or you could even use maple syrup. Have fun. Colleen

  7. I have tried several gluten-free carrot cake recipes that have been okay, but a lot of work. This one sounds good and simple to make. I will be altering to make it vegan, but can’t wait to try. Carrot cake is my favorite….even more than chocolate 😉
