Martha Stewart’s One-Pot Chicken

with Rice and Swiss Chard

This week our One Pot Meal Recipe is coming from Home Cook Adventures.   They say  ” just realized this recipe is gluten free and dairy free too.  I followed the recipe pretty closely, except that I threw all of the swiss chard in rather than waiting to add the leaves towards the end like it states.  This was the first time I bought and cooked swiss chard. Oh well, it still came out delicious, but most of the leaves were charred on the bottom of the pot.”

So if you make this fabulous recipe I would put the chicken on the bottom with the rice and more of the chard on the top so it can cook with the juices of the chicken.

“Verdict: Delicious, easy, healthy, and I would make it again.  The freshly squeezed lemon wedge really brings out the flavor of the dish.  Simply seasoned with salt and pepper, this is another comfort food dish I would add to my cooking repertoire.  I would probably make this on a weekend since it took me about 1 hour including prep and cook time; this is a little long for me on a weeknight unless traffic wasn’t terrible and I make it home at a decent time.  The recipe suggests some of the vegetables can be replaced with other types like parsnips versus carrots or spinach versus swiss chard.  I liked it just the way it was per Bridget Jones’ Mark Darcy.”
