Vegan Eggnog

Eggnog is one of my favorite Holiday drinks! I am so happy to share this recipe for Vegan Eggnog! This recipe is gluten free, dairy free and vegan which means there are NO eggs in this recipe. I cook with eggs but the thought of drinking raw eggs just makes me gag! Silk has a wonderful Vegan Eggnog available at the grocer but wouldn’t you like to make your own eggnog and not have to think about it sitting in grocers for months on end before being purchased??
This Vegan Eggnog is made from coconut milk, cashews and spices – how easy and healthy! Easy because this recipe is made in a blender making it nice and frothy and you are done! Healthy because it has cashews!
Cashews are one of the lowest-fiber nuts that are packed with vitamins, minerals, and antioxidants. They contain the vitamins E, K and B6. They pack minerals such as copper, phosphorus, zinc, magnesium, iron and selenium! Our body needs all these vitamins and minerals to function. One study even shows cashews reduce blood pressure and raise “good” cholesterol levels. So Cheers! And drink up this holiday season.

Recipe for Vegan Eggnog:
Vegan Eggnog
Equipment
- Blender
Ingredients
- 1/2 Cup Cashews Raw
- 2 Cups Coconut Milk Full Fat
- 1/4 Cup Maple Syrup
- 1/2 tsp Nutmeg ground
- 1/4 tsp Cinnamon ground
- 1/4 tsp Allspice ground
- 1 Tbsp Vanilla Extract
- Nutmeg whole
Instructions
- Soak the cashews in water, overnight. Or soak them in boiling water for 1 hour. Drain the cashews.Combine the cashews, maple syrup, vanilla extract, cinnamon, allspice, nutmeg and the coconut milk in a blender. Blend until smooth.Let it chill in the fridge for 2 hours.Serve with a sprinkle of freshly grated nutmeg (ground nutmeg works too) and a cinnamon stick.


This eggnog recipe will be great for the holidays.

Being Dairy Free it’s a must to make your own. Store bought doesn’t cut it.

I’d always thought cashews had a resin that required roasting, interesting!
