Best Ever Sweet Potato Fries

So you wonder, are Sweet Potato Fries really better for you than regular fries?  Above all, sweet potatoes are better because they are a complex carbohydrate. In other words, it takes a longer time to break down in the body and by the time that happens the body will burn it as fuel instead of storing it in the blood stream as sugar or fat.

Regular potatoes are a simple carbohydrate which forces your body to produce more insulin than it normally would. As a result, it basically turns to sugar quickly and is absorbed into the blood stream extremely fast. So which is your choice?

Here is a healthy fact about Sweet Potatoes to help you make your choice!  Sweet potato may help improve insulin sensitivity. In one 2008 study, researchers found that an extract of white skinned sweet potato improved insulin sensitivity in people with type 2 diabetes.

Best Ever Sweet Potato Fries

Ingredients

  • 2 large sweet potatoes peeled and cut into french fry-size pieces
  • 1 Tbsp olive oil extra virgin
  • 2 Tbsp Rosemary minced fresh
  • salt & pepper to taste

Instructions

  • Preheat oven to 425 degrees F
  • Toss sweet potatoes, olive oil, rosemary, salt and pepper together in a gallon Ziploc bag. Arrange sweet potatoes on a baking sheet.
  • Bake in the preheated oven until tender, 20-30 minutes.
