Slow Cooker Coffee Braised Roast

We were up in Anchorage recently to visit our son and his family.  My daughter in law is such a fantastic cook.  She made the best flavored roast I have had!   She used coffee granules in the marinade and I don’t drink coffee so was a bit worried about liking the flavors but yum!  It was very tender.   This is an easy recipe that is gluten-free and dairy-free and the best part is she is sharing her recipe.   She made this using Elk Roast but I’m sure it would work fine for regular beef.

Slow Cooker Coffee Braised Roast

Ingredients

  • 2-3 lb beef roast
  • 1 large shallot
  • 3 garlic cloves minced
  • 1 Tbsp dark coffee freshly ground coffee beans
  • 2 Tbsp orange zest
  • 1 stick of cinnamon
  • 2 Tbsp pure maple syrup
  • Freshly ground black pepper
  • Sea salt
  • 1 Tbsp olive oil

Instructions

  • On high heat take a skillet and heat up the olive oil.
  • Sprinkle the beef with salt and pepper and sear the roast on all sides.
  • Keep the oil in the pan and place the roast in the crock pot and let it sit.
  • In the left over oil, saute the shallots for about 5 minutes, or until they become soft, add the garlic and cook for another 2 minutes.
  • Stir in the orange zest, cinnamon stick, coffee and maple syrup making sure to completely mix it together and get any bits stuck to the pan.
  • Bring the sauce to a boil and then lower down to a simmer for 3 minutes.
  • Cover the whole roast with the mixture and let it cook on low for 7-8 hours.
