Living in Alaska we catch our own salmon.  Salmon is so rich I can’t eat alot of it at one time.  Having Salmon in a salad is a great way to get a healthy meal!  This Salmon is prepared quickly by frying with blueberries for an added flavor that is out of this world!   Bring your favorite salad greens into a plate or bowl and top it with this Salmon and Blueberry Salad recipe!

Salmon and Blueberry Salad, Dairy and Gluten Free

Salmon is an excellent source of vitamin B12, vitamin D, and selenium. It is a good source of niacin, omega-3 fatty acids, protein, phosphorus, and vitamin B6. It is also a good source of choline, pantothenic acid, biotin, and potassium.   And our Alaskan caught salmon is wild!

The color of this salmon isn’t as pink as some.  Humpy or Pink Salmon are very light in color when cooked and very mild in flavor.  Perfect to soak up the blueberry flavors.

Salmon and Blueberry Salad, Dairy and Gluten Free

This Salmon is prepared quickly by frying with blueberries for an added flavor that is out of this world!   Bring your favorite salad greens into a plate or bowl and top it with this Salmon and Blueberry Salad recipe!

Ingredients

  • Large Salmon Filet
  • 3/4 cup Blueberries
  • 1/8 cup Lemon Juice
  • 1/2 cup Purple Cabbage shredded
  • 1/2 cup Shaved Carrots
  • 1 cup Romaine Lettuce chopped

Instructions

  • Place salmon in a pan and coat in lemon juice. Sprinkle with salt and pepper if desired.
  • Place a handful of blueberries in the pan with your salmon.
  • Fry until the salmon is fully cooked and has a blue tint from the blueberries.
  • Chop your purple cabbage and romaine lettuce and place in a bowl with your shaved carrots.
  • Break salmon into 2 pieces and place one piece on top of each salad along with the roasted blueberries and a few fresh uncooked blueberries.
  • Top with your favorite dressing and enjoy!
