Russian Potato Salad Recipe

Our Alaskan Russian friends have shared with us their family basic recipe below that makes a lovely and delicious pink potato salad.

Ingredients

  • 10 Potatoes
  • 5 diced cooked beets
  • 1/2 cup baby peas
  • 1/4 cup gherkins chopped fine instead of dill pickles
  • 1/2 tsp salt
  • 1/2 cup of Vegenaise

Instructions

  • Boil potatoes, cool then peel skins and cube, place in large mixing bowl.
  • Mix all other ingredients together with the potatoes and serve
