Sweet Potato Bacon Flat Bread

- 1 ball of your favorite pizza dough - I use Bob's Red MillGluten Free Pizza Crust Mix
- 1 small head of cauliflower or about 2 cups that have been cut to about ¼ inch thick
- 1 cup mashed sweet potato heaped
- ½ cup chopped crispy turkey bacon

fresh chives or green onions and pea shoots

olive oil and sea salt
Preheat your oven to 425 degrees.
Heat a nonstick pan to medium and add a bit of olive oil and salt, when hot, lay in the flat pieces of cauliflower. Cook with the intent of almost fully cooking through and browning on both sides.
While that is cooking, spray your pizza pan with nonstick spray and stretch your dough to fit.
Add dollops of the sweet potato all over the dough.
Chop the chives and prep the greens.
Place the cooked cauliflower slices on top of the pizza and then add on the chopped bacon.
Drizzle a little olive oil around the top of the flat bread to keep everything from drying out while in the oven.
Cook for 10 to 14 minutes (final cook time will depend on how hot your oven runs and the size of your pizza dough).
Sprinkle with the fresh greens, slice and nosh!
