Cheezy Sauce
- 1 cup hot tap water
- 1 cup cooked brown rice
- 3/4 cup raw cashews
- 1/4 cup cooked carrots
- 2 Tbs nutritional yeast
- 1 Tbs fresh lemon juice
- 1 1/2 tsp salt
- 1 tsp onion powder
- 1/4 tsp garlic powder
Tofu Blend:
- 1/2 cup firm tofu
- 2 Tbs fresh lemon juice
Veggie Saute:
- 1 cup chopped onion
- 2 med garlic cloves minced
Artichokes & spices
- 2 jars of marinated artichoke hearts-drained
- 1/4 cup bread cubes gluten-free if needed
- 2 Tbsp minced fresh parsley
- 1/2 tsp seasoned salt
- 1/8 tsp oregano
Blend the ingredients for cheezy sauce in a heavy-duty blender until smooth then set aside
Blend the tofu and lemon juice in a blender until smooth
In large mixing bowl add the Tofu Blend, Veggie Saute, Artichokes and spices....stir til blended then add 2/3 c cheezy sauce (more if you like it thinner consistency) Place all ingredients mixed into a baking dish, sprinkle with paprika and bake 350 degrees for 30 minutes.
