Hot Cheezy Vegan & Gluten-Free Artichoke Dip Recipe

Ingredients

Cheezy Sauce

  • 1 cup hot tap water
  • 1 cup cooked brown rice
  • 3/4 cup raw cashews
  • 1/4 cup cooked carrots
  • 2 Tbs nutritional yeast
  • 1 Tbs fresh lemon juice
  • 1 1/2 tsp salt
  • 1 tsp onion powder
  • 1/4 tsp garlic powder

Tofu Blend:

  • 1/2 cup firm tofu
  • 2 Tbs fresh lemon juice

Veggie Saute:

  • 1 cup chopped onion
  • 2 med garlic cloves minced

Artichokes & spices

  • 2 jars of  marinated artichoke hearts-drained
  • 1/4 cup bread cubes gluten-free if needed
  • 2 Tbsp minced fresh parsley
  • 1/2 tsp seasoned salt
  • 1/8 tsp oregano

Instructions

  • Blend the ingredients for cheezy sauce in a heavy-duty blender until smooth then set aside
  • Blend the tofu and lemon juice in a blender until smooth
  • In large mixing bowl add the Tofu Blend, Veggie Saute, Artichokes and spices....stir til blended then add 2/3 c cheezy sauce (more if you like it thinner consistency)  Place all ingredients mixed into a baking dish, sprinkle with paprika and bake 350 degrees for 30 minutes.
