Ingredients

  • 29 oz can Libby's Pumpkin
  • 2 cans Coconut Milk
  • 1 cup pitted dates
  • 1/2 cup honey or agave or maple syrup.
  • 1/2 cup cornstarch
  • 1 tsp vanilla
  • 1/8 tsp maple flavoring
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp salt

Instructions

  • Blend until smooth in blender, pour into 2-pie shells. Bake 350 for 1-hour
