Lentil Roast Leftovers are great in sandwiches

Ingredients

  • 1 1/2 cup cooked lentils
  • 1 cup soymilk
  • 1/4 cup olive oil
  • 1/2 cup onion chopped
  • 1/2 cup pecan meal I grind the pecans in a food processor or blender
  • 1 tsp garlic powder I like to use chopped fresh garlic
  • 1 1/2 cup cornflakes slightly hand crushed

Instructions

  • Mix all the ingredients together in a bowl
  • Transfer ingredients into an oiled casserole dish
  • Bake at 350 for 45 minutes
  • We like it served topped with ketchup but your favorite gravy or BBQ sauce would be yummy too
