Slow Cooker Halibut Curry

Ingredients

  • What you will need:
  • 2 lbs halibut fillets skinned and cut up ( or any other white meat fish )
  • 1 medium onion thinly sliced
  • 15 oz can chick peas drained and rinsed
  • 2 medium sweet potatoes peeled and diced
  • 1 cup coconut milk
  • ½ cup chicken broth
  • 2 15 oz cans tomato sauce
  • 3 Tbsp curry powder
  • 2 tsp salt
  • ½ tsp cayenne pepper
  • 2 Tbsp fresh lemon juice

Instructions

  • Directions:
  • In the bottom of the slow cooker, whisk together coconut milk, chicken stock, tomato sauce, curry powder, salt, and cayenne.
  • Add halibut, onion, chickpeas, and sweet potatoes. Using tongs, gently toss ingredients together to ensure they are evenly coated.
  • Cook on low for 6 hours or high for 3 hours. Stir lemon juice in 5 minutes before serving.
  • Serve over hot cooked rice and garnish with fresh cilantro if desired.
