Ingredients
What you will need:

halibut fillets
skinned and cut up ( or any other white meat fish )

medium onion thinly sliced

can chick peas drained and rinsed

medium sweet potatoes peeled and diced

coconut milk

chicken broth

cans tomato sauce

Instructions
Directions:
In the bottom of the slow cooker, whisk together coconut milk, chicken stock, tomato sauce, curry powder, salt, and cayenne.
Add halibut, onion, chickpeas, and sweet potatoes. Using tongs, gently toss ingredients together to ensure they are evenly coated.
Cook on low for 6 hours or high for 3 hours. Stir lemon juice in 5 minutes before serving.
Serve over hot cooked rice and garnish with fresh cilantro if desired.
