Ingredients
For the Guacamole:

whole avocados
diced

beefsteak tomato
fined diced

Juice of 1 lime

For the Salsa:

large tomatoes

Can Amy's Organic Refried Beans
they're vegan

can or 2 cups sweet corn
1
cup
corn tortilla chips
roughly crushed
Romaine leaves

cup
black olives
roughly chopped (for garnish)
Instructions
Combine the guacamole ingredients and mix gently. Place in a serving bowl. Do the same for the salsa.
Drain the corn and place in a serving bowl. Do the same with the crushed tortilla chips and the refried beans.
Arrange the romaine leaves on a platter and garnish with the black olives.
Let guests create their own loaded lettuce boats and enjoy!
