Stuffed boats

Ingredients

  • For the Guacamole:
  • 2 whole avocados diced
  • 1/2 beefsteak tomato fined diced
  • 1/2 onion finely diced
  • Juice of 1 lime
  • 1 tbsp cilantro
  • 1 clove garlic finely diced
  • 1 tsp cumin
  • For the Salsa:
  • 2 large tomatoes
  • 1/2 onion
  • 1 tsp cumin
  • 1/2 tsp Cayenne
  • 1/2 tsp red pepper optional
  • 1 clove garlic finely diced
  • 1 Can Amy's Organic Refried Beans they're vegan
  • 1 can or 2 cups sweet corn
  • 1 cup corn tortilla chips roughly crushed
  • Romaine leaves
  • 1 cup black olives roughly chopped (for garnish)

Instructions

  • Combine the guacamole ingredients and mix gently. Place in a serving bowl. Do the same for the salsa.
  • Drain the corn and place in a serving bowl. Do the same with the crushed tortilla chips and the refried beans.
  • Arrange the romaine leaves on a platter and garnish with the black olives.
  • Let guests create their own loaded lettuce boats and enjoy!
