Ingredients
Injection Ingredients:
16ozbeef joint
¼cupred wine
¼cupbeef stock
3TbspWorcestershire sauce
2Tbspapple cider vinegar
1tspliquid smoke
2Tbspbalsamic vinegar
Kansas City style dry rub:
½cupbrown sugar
3Tbspchili powder
1tspsmoked sea salt
1tspdried marjoram
1tspdried thyme
1tspground black pepper
2Tbsponion powder
2Tbspgarlic salt
1Tbsponion salt
Serve with your favorite vegetable and baked or mashed potatoes. Enjoy.
Instructions
Preheat the oven to 250 degrees F.
Mix ingredients together, and with an injector, inject into a 5-6 pound roast on all sides until all of the sauce is used.
After the roast has been injected, rub it all over with olive oil.
Mix dry rub ingredients together and rub all over the roast.
Place the roast into a roasting pan with a rack, and slowly roast it in the oven for about 8 hours.
When done, remove from the oven and let cool for 10-15 minutes before slicing.
