Ingredients

Injection Ingredients:

  • 16 oz beef joint
  • ¼ cup red wine
  • ¼ cup beef stock
  • 3 Tbsp Worcestershire sauce
  • 2 Tbsp apple cider vinegar
  • 1 tsp liquid smoke
  • 2 Tbsp balsamic vinegar

Kansas City style dry rub:

  • ½ cup brown sugar
  • 3 Tbsp chili powder
  • 1 tsp smoked sea salt
  • 1 tsp dried marjoram
  • 1 tsp dried thyme
  • 1 tsp ground black pepper
  • 2 Tbsp onion powder
  • 2 Tbsp garlic salt
  • 1 Tbsp onion salt
  • Serve with your favorite vegetable and baked or mashed potatoes. Enjoy.

Instructions

  • Preheat the oven to 250 degrees F.
  • Mix ingredients together, and with an injector, inject into a 5-6 pound roast on all sides until all of the sauce is used.
  • After the roast has been injected, rub it all over with olive oil.
  • Mix dry rub ingredients together and rub all over the roast.
  • Place the roast into a roasting pan with a rack, and slowly roast it in the oven for about 8 hours.
  • When done, remove from the oven and let cool for 10-15 minutes before slicing.
