Mediterranean Halibut

Mediterranean Halibut is full of flavour and dairy and gluten free. Great for an easy weeknight meal, on the table in just 30 minutes!

Ingredients

  • 1 tsp olive oil
  • 1 cup zucchini diced
  • ½ cup onion minced
  • 1 clove garlic minced
  • 2 cups fresh tomatoes diced
  • 2 Tbsp. fresh basil chopped
  • ¼ tsp salt
  • ¼ tsp black ground pepper
  • 4 halibut steaks - or other white fish

Instructions

  • Preheat oven to 450 degrees. Spray a baking dish with oil.
  • Heat olive oil in a saucepan over medium heat and stir in zucchini, onion, and garlic.
  • Cook and stir 5 minutes until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.
  • Arrange halibut in a single layer in baking dish. Spoon equal amounts of the zucchini mixture over each steak.
  • Bake 15 minutes in the hot oven or until fish flakes easily.
