Baked Margarita Salmon

Living in Alaska we are lucky that we can catch our own native salmon!   We have to come up with lots of different ways to serve Salmon and other fish we catch because we eat mainly fish for our protein all year long.   This is a tangy recipe for baked margarita salmon filets.

Ingredients

  • 6 5oz salmon filets
  • 3 Tbsp fresh lime juice
  • 3 Tbsp orange blossom honey
  • 1 pinch brown sugar
  • 2 Tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Lime slices for garnish if desired

Instructions

  • Place salmon filets in a 9x13 inch baking dish.
  • In a small bowl, stir together the lime juice, honey, brown sugar, and olive oil. Pour over the salmon. Cover and refrigerate for 30 minutes to marinate.
  • Preheat the oven to 450 degrees F.
  • Season the salmon with salt and pepper.
  • Bake for 15 minutes in the center of the preheated oven, or until fish flakes easily with a fork. Garnish with lime slices and serve with rice and a vegetable
