Ingredients

  • 15 Ounces Black Beans Rinsed
  • ½ Cup Cilantro
  • 1 Small Sweet Onion Sliced and Chunked
  • 1 Medium Avocado Chunked
  • 1 Large Jalapeno Chopped or sweet pepper if you can't do heat
  • 1 Tablespoon Fresh Lime Juice
  • salt & pepper to taste
  • dash of balsamic vinegar if you want

Instructions

  • Combine black beans, cilantro, onion, avocado, jalapeno, and lime juice. Add salt and pepper to taste. If you like balsamic vinegar you could add a dash.
  • Toss with fork.
  • Chill one hour.
  • Serve.
