Ingredients

  • 1 1/2 cup gluten free all-purpose flour blend I used Pure Pantry
  • 3 Tbsp natural cane sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 3/4 cup Pumpkin Pie Mix canned
  • 1 1/3 cup So Delicious Pumpkin Spice Coconut Beverage
  • 1 tsp vanilla
  • 1 Tbsp olive oil

Instructions

  • Mix all the ingredients listed above
  • Pour 1/2 cup onto pancake griddle ( 3 pancakes fit perfectly )
  • Use spoon to spread the mix around so it is very thin on the griddle
  • Cook until little bubble come up in the middle then flip and brown lightly
  • Serve with your favorite topping
