If not dairy free add 1/4 cup crumbled feta cheese
In a medium bowl add the tomatoes, olives, herbs, vinegar and 1 Tbsp olive oil and toss to combine. Taste and adjust seasoning with salt and pepper and set aside.
In a large saute' pan over medium-high heat, add the remaining olive oil and heat until simmering. Add the garlic and salute' until fragrant, about 1 minute. Add the squash noodles to the pan and season with salt and pepper. Saute' noodles just until tender, about 6 minutes.
Transfer noodles to a serving platter and top with marinated tomatoes and garnish with crumbled feta or nutritional yeast. Serve immediately.
