Ingredients

  • 1/3 cup canola oil
  • ½ cup sugar
  • 3 cups gluten-free flour blend of your choice
  • ½ teaspoon xanthan gum
  • 1 ½ teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 ½ teaspoons ground ginger
  • ½ teaspoon salt
  • 1 cup molasses
  • 1 cup hot water

Instructions

  • Grease muffin tin, or line with baking cups
  • Preheat oven to 350 degrees
  • In a large bowl, combine all ingredients and mix until well blended
  • Pour into muffin cups, fill each about ¾
  • Bake 35 – 40 minutes, until a toothpick inserted in the middle comes out clean
