Roasted Rosemary Sweet Potatoes

Ingredients

  • 3 large sweet potatoes
  • 4 Tbsp olive oil
  • 3 Tbsp brown sugar
  • 1 Tbsp fresh rosemary chopped
  • ½ tsp kosher salt
  • ¼ tsp black pepper
  • ½ tsp paprika

Instructions

  • Preheat oven to 400.
  • Peel and cut sweet potatoes into ½ inch cubes.
  • Mix all other ingredients.
  • Put potatoes in a plastic bag. Add other ingredients and mix well to coat.
  • Spread out in single layer on a sheet pan. Bake for 45 minutes or until potatoes are soft when pierced with a fork.
  • Turn potatoes about halfway through cooking time.
