Ingredients

  • 2-3 lb beef roast
  • 1 large shallot
  • 3 garlic cloves minced
  • 1 Tbsp dark coffee freshly ground coffee beans
  • 2 Tbsp orange zest
  • 1 stick of cinnamon
  • 2 Tbsp pure maple syrup
  • Freshly ground black pepper
  • Sea salt
  • 1 Tbsp olive oil

Instructions

  • On high heat take a skillet and heat up the olive oil.
  • Sprinkle the beef with salt and pepper and sear the roast on all sides.
  • Keep the oil in the pan and place the roast in the crock pot and let it sit.
  • In the left over oil, saute the shallots for about 5 minutes, or until they become soft, add the garlic and cook for another 2 minutes.
  • Stir in the orange zest, cinnamon stick, coffee and maple syrup making sure to completely mix it together and get any bits stuck to the pan.
  • Bring the sauce to a boil and then lower down to a simmer for 3 minutes.
  • Cover the whole roast with the mixture and let it cook on low for 7-8 hours.
