Ingredients
2-3lbbeef roast
1large shallot
3garlic clovesminced
1Tbspdark coffee freshly ground coffee beans
2Tbsporange zest
1stick of cinnamon
2Tbsppure maple syrup
Freshly ground black pepper
Sea salt
1Tbspolive oil
Instructions
On high heat take a skillet and heat up the olive oil.
Sprinkle the beef with salt and pepper and sear the roast on all sides.
Keep the oil in the pan and place the roast in the crock pot and let it sit.
In the left over oil, saute the shallots for about 5 minutes, or until they become soft, add the garlic and cook for another 2 minutes.
Stir in the orange zest, cinnamon stick, coffee and maple syrup making sure to completely mix it together and get any bits stuck to the pan.
Bring the sauce to a boil and then lower down to a simmer for 3 minutes.
Cover the whole roast with the mixture and let it cook on low for 7-8 hours.
