Ingredients

canola oil

green curry paste

coconut milk

oyster sauce

light brown sugar

salmon fillets
6-8 oz each
your choice of fresh veggies to stir fry
Instructions
In a large nonstick pan or stockpot, cook the curry paste in oil until fragrant, about 1 minute.
Stir in coconut milk, oyster sauce, and sugar. Bring to a boil.
Turn off heat and gently add salmon to sauce, skin side down.
Place thinly sliced veggies of your choice on the fish.
Return heat to simmer. Once simmering, cover pan and cook 5 minutes.
Turn off heat and let salmon rest 5 minutes or until is it opaque throughout.
Serve over cooked rice.
