PECAN LOAF

A great GF and DF alternative to meatloaf

Ingredients

  • 1/2 cup tofu   I found using gluten free bread crumbs it needed more moisture so I would increase it to almost 3/4 cup tofu if you are gluten-free
  • 2 cups water
  • 4 cups gluten free bread crumbs
  • 2 cups ground pecans
  • 1 cup chopped onions
  • 1 Tbs Gluten Free Soy Sauce or Bragg's Liquid Amino's
  • 1 1/2 tsp sea salt
  • 2 Tbs tomato paste
  • 1 tsp garlic powder
  • 1 Tbs onion powder
  • 1 tsp sage
  • 1 tsp rosemary
  • 1 tsp basil

Instructions

  • Blend tofu and water
  • Add the rest of the ingredients and mix well and place into a baking dish
  • Cover the loaf with BBQ sauce or the following sauce recipe
  • Mix together:   2 Tbsp ketchup, 1 Tbs Balsamic Vinegar, 1 Tbs maple syrup, 1 Tbs apple butter
  • Bake covered in 350 oven for 40 minutes.    Check to see if done in middle.   If too moist bake another 10 minutes.

Notes

Serve with potatoes and gravy.
