Vegan French Toast
A great vegan alternative to a breakfast favorite

- 2 ripe bananas
- 1/2 c. soy/almond/coconut milk we used vanilla soy milk - but I bet coconut milk would be yummy!
- 1 tsp. vanilla
- 1 tsp. cinnamon I added just a bit more
- and just a little nutmeg about 1/8 tsp
- gluten free bread
- dairy-free margarine we like Smart Balance Light
Put all of the ingredients (except the bread and margarine) into the blender and mix it up. My kids got excited and thought we were having "banana soup" :)
Pour the mixture into a deep plate and dip your bread on both sides.
Melt a bit of the margarine in the skillet (you can use a non-stick spray or bit of oil if you want, but I had the best luck with the margarine).
