Vegan French Toast

A great vegan alternative to a breakfast favorite

Ingredients

  • 2 ripe bananas
  • 1/2 c. soy/almond/coconut milk we used vanilla soy milk - but I bet coconut milk would be yummy!
  • 1 tsp. vanilla
  • 1 tsp. cinnamon I added just a bit more
  • and just a little nutmeg about 1/8 tsp
  • gluten free bread
  • dairy-free margarine we like Smart Balance Light

Instructions

  • Put all of the ingredients (except the bread and margarine) into the blender and mix it up.  My kids got excited and thought we were having "banana soup" :)
  • Pour the mixture into a deep plate and dip your bread on both sides.
  • Melt a bit of the margarine in the skillet (you can use a non-stick spray or bit of oil if you want, but I had the best luck with the margarine).
