BlueRaz Jam

Equipment

  • LARGE SOUP KETTLE

Ingredients

  • 3 cups blueberries
  • 2 cups raspberries
  • 1 large lemon
  • 1 1/2 cups sugar

Instructions

  • Putting it all together:
  • In a medium pot combine blueberries, raspberries, and sugar.
  • Zest the whole lemon and add to the pot.
  • Cut the lemon in half and squeeze out all the juice.
  • This will give you about 1/3 of a cup if it is a little more that is fine.
  • Place 4-5 spoons in the freezer.
  • Boil over medium heat until you have a strong boil.The bubbles should not break up when you are stirring.
  • Let it boil uncovered for approximately 15-20 minutes,stirring frequently.
  • When the mixture begins to look like jam, insert frozen spoon.
  • The jam should slowly fall off in a clump, NOT drip.
  • You can also run your
  • finger thru the middle on the spoon and get a line like in the picture.
  • If it is not thick enough continue to boil and retest in a few minutes.
  • Once it is thick enough,remove from heat and place in container.
  • Let cool with lid off at room temperature.
  • Once it is cool place lid on and refrigerate.
  • It will keep for up to 2 weeks if you don't eat it before then.
