Ingredients

New or Red Skin Potatoes

mini carrots
diced
1/2
orange pepper
washed and chopped

green onions
sliced thinly
Vinaigrette Ingredients:

Pesto

Rice Vinegar

Tbsp
Olive Oil

Tbsp
Dijon Mustard

Tbsp
Water
Sprinkle of Black Pepper
Instructions
Wash potatoes and slice into chunks.
Drop into pot of boiling water and let boil about 8 minutes (or until just tender).
While potatoes are boiling, combine carrots, orange pepper and green onions in large bowl and set aside.
Combine Vinaigrette ingredients in blender and process until smooth.
Drain potatoes and combine with salad ingredients, tossing carefully.
Pour Vinaigrette on top of salad and toss gently to coat.
Serve Warm or let sit for 1 hour to serve at room temperature.
