Gluten-free Almond Joy Bars

Here is a whole food alternative to satisfy your craving without using any questionable ingredients.

Ingredients

  • 6 tbsp almond butter
  • 12 large dates pits removed
  • 3 tbsp coconut shreds I used Trader Joe's Roasted Coconut
  • 12 raw almonds 1 3.5-oz high quality dark chocolate bar make sure to read the ingredients to be sure it's vegan!

Instructions

  • Combine the almond butter and the dates in a food processor. Process until the dates are finely chopped.
  • Add the coconut and process 1 minute more.
  • Using a tablespoon, form rectangular shaped bars. Top each one with an almond. Place these on a plate and put in the freezer for at least 60 minutes.
  • In a small pot, melt the chocolate. Make sure not to burn.
  • Remove the bars from the freezer and drizzle with melted chocolate. Let the chocolate cool. You can put them back in the freezer to speed up the process.
  • Enjoy, and try not to eat them all in one sitting!
