Ingredients
6tbspalmond butter
12large datespits removed
3tbspcoconut shredsI used Trader Joe's Roasted Coconut
12raw almonds 1 3.5-oz high quality dark chocolate barmake sure to read the ingredients to be sure it's vegan!
Instructions
Combine the almond butter and the dates in a food processor. Process until the dates are finely chopped.
Add the coconut and process 1 minute more.
Using a tablespoon, form rectangular shaped bars. Top each one with an almond. Place these on a plate and put in the freezer for at least 60 minutes.
In a small pot, melt the chocolate. Make sure not to burn.
Remove the bars from the freezer and drizzle with melted chocolate. Let the chocolate cool. You can put them back in the freezer to speed up the process.
