I love pesto sauces with salmon. Since we eat gluten-free and dairy-free it can be hard to find great a great pesto. Here my Daughter in law shares her recipe for Roasted Salmon with Cilantro Pesto!

Ingredients
1Tbspgarlicminced
1cupcilantro loosely packed
5Tbspolive oil
Juice of one lime
Salt
2lbsalmon fillet skin on
½can diced tomatoes
Instructions
Preheat oven to 400 degrees F.
Place the garlic, cilantro, 2 Tbsp of the olive oil, the lime juice, salt and pepper in a blender or food processor.
Process until creamy.
Brush a baking pan or sheet with the remaining oil and place the salmon in it.
Spread the cilantro mixture on the salmon, scatter the tomatoes over it, and sprinkle with a little more salt and pepper.
Bake, uncovered, until the salmon is done, 12-15 minutes.
