Ingredients
Large Salmon Filet
3/4cupBlueberries
1/8cupLemon Juice
1/2cupPurple Cabbage shredded
1/2cupShaved Carrots
1cupRomaine Lettuce chopped
Instructions
Place salmon in a pan and coat in lemon juice. Sprinkle with salt and pepper if desired.
Place a handful of blueberries in the pan with your salmon.
Fry until the salmon is fully cooked and has a blue tint from the blueberries.
Chop your purple cabbage and romaine lettuce and place in a bowl with your shaved carrots.
Break salmon into 2 pieces and place one piece on top of each salad along with the roasted blueberries and a few fresh uncooked blueberries.
