Baking with gluten free flours is very different that using wheat or whole wheat flours. I love Challah bread but it is very hard to braid a loaf of bread made with gluten flour. This recipe for Honey Challah Bites is a nice way to get the flavor of Challah bread!

Ingredients
3Packets Dry yeast
1Tablespoonsugar
1 ¼CupWarm Water
3 ½CupsGluten-Free All Purpose Flour1 cup gluten = 1 cup regular flour type
½TablespoonSalt
½CupHoney
¼CupOlive Oil
2Eggs
2Egg Yolks
1TeaspoonWater
Instructions
Place water, 1 teaspoon sugar, and yeast in a bowl and allow to sit for about 15 minutes or until foamy.
Add your flour, salt, oil, honey, and 2 eggs and mix well.
Knead dough until all mixture is in a dough-like ball.
Place in a covered bowl for about 3.5 hours.
Roll dough into about 3-inch balls and place on a greased cookie sheet.
In a dish, mix together your remaining water and 2 egg yolks.
Brush this mixture onto the top of your balls.
Bake at 375 degrees for about 15-20 minutes or until lightly browned on top. If you like your challah to be darker in color, leave in until desired color is reached.
