Honey Challah Bites Gluten and Dairy Free

Baking with gluten free flours is very different that using wheat or whole wheat flours.  I love Challah bread but it is very hard to braid a loaf of bread made with gluten flour.  This recipe for Honey Challah Bites is a nice way to get the flavor of Challah bread!

Ingredients

  • 3 Packets Dry yeast
  • 1 Tablespoon sugar
  • 1 ¼ Cup Warm Water
  • 3 ½ Cups Gluten-Free All Purpose Flour 1 cup gluten = 1 cup regular flour type
  • ½ Tablespoon Salt
  • ½ Cup Honey
  • ¼ Cup Olive Oil
  • 2 Eggs
  • 2 Egg Yolks
  • 1 Teaspoon Water

Instructions

  • Place water, 1 teaspoon sugar, and yeast in a bowl and allow to sit for about 15 minutes or until foamy.
  • Add your flour, salt, oil, honey, and 2 eggs and mix well.
  • Knead dough until all mixture is in a dough-like ball.
  • Place in a covered bowl for about 3.5 hours.
  • Roll dough into about 3-inch balls and place on a greased cookie sheet.
  • In a dish, mix together your remaining water and 2 egg yolks.
  • Brush this mixture onto the top of your balls.
  • Bake at 375 degrees for about 15-20 minutes or until lightly browned on top. If you like your challah to be darker in color, leave in until desired color is reached.
