Homemade Pico de Gallo

This salsa called Pico de Gallo is also called salsa fresca.  It is served with most Mexican dishes.  I have grown to love this salsa over my eggs for breakfast!

Ingredients

  • 2 lbs. Tomatoes finely diced.
  • 1 Medium Onion finely diced
  • 1-2 Seeded Jalapeno finely diced.
  • 1 Cup Cilantro roughly chopped
  • 2 Tablespoons Salt
  • Juice from 2 limes

Instructions

  • Mix tomatoes and salt in a large bowl, let set for 5 minutes.
  • Add the remaining ingredients, mix well.
  • Drain excess liquid before serving!
