Ingredients
1.5poundsstew meat
1large golden beet
1medium sweet potato
1small onion
3carrots
fresh thyme salt and pepper to taste
4 to 5cupsof quality bone broth or stockwe use homemade chicken bone broth with amazing results.
Instructions
Brown the meat on all sides then place in the bottom of your Dutch oven.
Wash, peel and chop the vegetables and place on top of the meat.
Add the salt, pepper, fresh thyme and broth on top.
Cover and cook on low to medium low for about 90 minutes.
**The final cook time and temperature will depend heavily on how hot your stove top cooks, ours runs very hot so we have to cook on low and keep a close eye on it, sometimes adding a little more liquid to make sure it does not burn.
The size of the meat and vegetable pieces will also make a difference in the cook time. If this is your first time using a Dutch oven, take a few quick notes about the ideal temp and cook time so you’ll remember for next time!
